Veggie Scramble

For a protein packed morning, scrambles are the way to go. Pick your favorite veggies and just add water!

5 minutes / 25 minutes

INGREDIENTS

  • 1 1/2 tbsp Bisquick Baking Mix
  • 1 1/2 tbsp powdered milk
  • 1 1/2 tbsp powdered egg
  • 2/3 cup water
  • dehydrated bell pepper, onion, carrots
  • 2 tbsp potato flakes
  • 1 tbsp soy sauce
  • 1 tbsp butter or margarine
  • 1/4 cup cubed cheese

Optional: tortilla to make a burrito

Directions

In a small container, mix together your first powdered ingredients. Then slowly add your water (avoiding lumps).

In a separate container, rehydrate your peppers, onions, and carrots with a bit of hot water (approximately 15 minutes), then drain.

While waiting on the veggies, melt your margarine or butter on a new separate pan over high heat.

Once melted, reduce the heat to medium-low, and add your egg batter mix. Watch carefully as this generally cooks quickly.

Mix the cheese, soy, and potato flakes in with your veggies, using a little hot water for finer texture.

Toss the veggie-mix into your eggs, and heat on low until it's hot!
